Pickled pepper

Pickled peppers are one of the most popular and beloved preserves in Polish cuisine.

These large, juicy, ripe, and carefully selected halves or quarters of red bell pepper are immersed in a traditional sweet-and-sour vinegar marinade, with the addition of bay leaves, mustard seeds, allspice, and other aromatic spices.

The vinegar in our brine doesn’t destroy all the vitamins in the vegetables. Thermal processing plays a significant role in the retention of vitamins. The shorter the pasteurization time, the more vitamins are preserved. It’s also worth noting that the color of the vegetable indicates its ripeness: red bell peppers are the most mature and sweetest, which is why we dedicate the most time to this variety.
