Beetroot relish with horseradish

Grated ripe red beets finely shredded into a pulp, accompanied by carefully grated fresh horseradish, with the addition of a vinegar brine and a hint of sugar and salt.

This is a staple side dish that must not be missing at Easter or Christmas. Beetroot relish with horseradish or just polish Ćwikła is indispensable on the holiday table. It always appears alongside herring salads and pickled mushrooms. We add it to sandwiches with roasted meats and serve it as an accompaniment to the festive meal.
